How long is 5000 PSI concrete workable?

I'm having some crazy strong concrete delivered tomorrow. I have poured and finished "normal" strength concrete before and you have plenty of time to get it smooth before it begins to set up. How much faster is this 5000 stuff going to begin to set? Any concrete people please advise. Thanx.
